Fish are cold-blooded aquatic vertebrates. Fish are often used for food.

Some eel-like creatures were seen swimming in a lake on Archer IV. (ENT: "Strange New World")

A large tank on the Xyrillian starship had eel-like creatures swimming in a liquid within it. (ENT: "Unexpected")

It is unknown what function these fish serve or what liquid they are swimming in. It can not be water, as it is revealed in the episode that the Xyrillians have trouble producing water. Indeed the closest approximation they could devise was a small gelatinous cube.

Several different species of fish were seen in large aquariums in the Cetacean Institute in Sausalito. (Star Trek IV: The Voyage Home)

On one occasion within the Dixon Hill holoprogram, Beverly Crusher asked if Jean-Luc Picard was a fish after being told by Data that Picard was "on ice" and "being grilled" in the program. The official book The Making of Star Trek: Deep Space Nine features a sketch of the giant fish. Here, it is mentioned that that fish is supposed to be a "Cardassian Sushi Ad" and that "it is known simply as the Fish".

When in 2369 the imaginations of the Deep Space 9 residents became reality, Julian Bashir created an illusory Jadzia Dax who compared the real Dax with a "cold fish". (DS9: "If Wishes Were Horses")

Both Benjamin Sisko and his father Joseph were skilled at cooking fish. Joseph would sometimes joked to the customers of his restaurant that they should thank him for just letting him look at the fish he had prepared for them. (DS9: "Equilibrium", "Homefront")
