...as a rancher
Gregg Palmer (born 25 January 1927; age 97) played an uncredited rancher in TOS: "Spectre of the Gun".
He also had two credited roles in Doctor Who, firstly as the Cyberman Gern in "The Tenth Planet" (which introduced the Cybermen) in 1966 and then as Lieut. Lucke in "The War Games" (which introduced the Time Lords) in 1969. Both stories were the swansongs for William Hartnell and Patrick Troughton. Because Palmer's role in Star Trek went uncredited, I'm not sure if he can be included with Simon Pegg, Daphne Ashbrook, Alan Dale, Barrie Ingham, Christopher Neame, Guy Siner, John Franklyn-Robbins, Maurice Roëves and Olaf Pooley, who had credited roles in both the Star Trek and Doctor Who franchises.
