Italian food was that which had its roots in Italy. Rich in tomatoes and olives, a wide variety of hearty dishes claimed this title.
Admiral Kirk loved Italian food, or so he claimed when Gillian Taylor asked if he and Spock liked "Italian." Spock, however, claimed not to like Italian food. After a brief dispute, Kirk assured Taylor that they both loved "Italian." Spock agreed. (Star Trek IV: The Voyage Home)
Geordi La Forge was also fond of Italian food. During a holodeck simulation with a holographic recreation of Leah Brahms, La Forge asked her if she liked Italian food, to which she replied, "Like it? Wait till I make you my fungilli." (TNG: "Booby Trap")
