A saint was a person elevated to a special status in various religions, often for activities related to their faith.

In Vok'sha mythology, their greatest hero ate stones for twenty-three days in order to kill the beast of "hate." For this action he became a saint. (VOY: "Heroes and Demons")

"Saint" could also be used to refer to people who have done nothing considered morally or legally wrong. Benjamin Sisko referred to Alynna Nechayev as a "saint" when contrasting her with the Maquis, who were just "people." (DS9: "The Maquis, Part II")

It could also refer to someone who had done something unusually kind. In 2375, Tom Paris called Neelix a saint after the Talaxian finally agreed to give him credit for an anniversary dinner for him and B'Elanna Torres. (VOY: "Warhead")

When the USS Enterprise-E was transported back in time to 2063, Zefram Cochrane was idolized by a number of the ship's crew. Cochrane, not happy about all of the attention, commented to Commander William T. Riker that "You all look at me as if I'm some kind of saint or visionary or something." Riker replied he didn't think he was a saint, but he did have a vision, and they were sitting in it. (Star Trek: First Contact)
