Miss Sarda was an employee of unknown species who once ran the dabo table at Quark's.

In 2369, she complained to Commander Benjamin Sisko of a clause in her work contract concerning sexual favors she had to perform for her employer, Quark. Upon hearing this, Commander Sisko invalidated the clause and informed Quark that he was not include such provisions in his employment contracts again. (DS9: "Captive Pursuit")

The script for "Captive Pursuit" describes Sarda as having "a terrific body...but is intelligent, not a ditz." [1]
The original story for "Captive Pursuit" implied Sarda was attracted to Sisko and included the line "come by and see me sometime", however, after lenthy conversations between the writing staff, it was ultimately removed from the final scene. (Star Trek: Deep Space Nine Companion, p. 27)
