In 2293, the Ahwahnee conducted a deep space exploration mission near Klingon territory. It was slated to be part of Colonel West's task force for the Operation Retrieve, a military extraction intended to rescue James T. Kirk and Leonard McCoy from Qo'noS. The mission was not mobilized, as the Federation president strictly forbade any such intervention for diplomatic reasons. (Star Trek VI: The Undiscovered Country)
Background
This vessel and registry was not referenced in dialog, but rather appeared on screen in the background artwork depicting the plans for Operation Retrieve. No design was established for Ahwahnee, it was probably graphically represented by the outline of a movie era refit Constitution-class vessel, but this does not seem to be evidence that is of that design, since that icon was used in every starship listed in the graphics except for the USS Excelsior.
