There have been at least two Federation starships known to bear the name USS Hermes.

USS Hermes (NCC-585)

The first starship Hermes was the prototype for the Hermes-class scouts, in service during the mid-23rd century.

This ship was never directly seen on screen, but it is commonly accepted as part of fandom because its schematics (taken from Franz Joseph's Star Trek Star Fleet Technical Manual) appeared on the Enterprise computer displays in Star Trek II: The Wrath of Khan and Star Trek III: The Search for Spock.

USS Hermes (NCC-10386)

The second starship Hermes was an Antares-class starship in service during the 24th century.

The ship served as part of the task force that blockaded the Klingon-Romulan border during the Klingon Civil War in early 2368. The ship had previously been docked at Starbase 234 for major repairs. (TNG: "Redemption, Part II")

The name is presumably a tribute to Hermes, the ancient Greek messenger-god.
