Vintage was the process of collecting ingredients and fermenting them for an alcoholic drink.

2309 was a popular vintage of Klingon bloodwine favored by Worf and Martok. (DS9: "Treachery, Faith and the Great River", "Once More Unto the Breach", "What You Leave Behind")

Kanar from the year 2327 was more expensive than regular kanar. (DS9: "Behind the Lines")
